Hiring our first sales person

I've reached a point in the growth of Coin Toss Brewing where I need to dedicate more time to running the business and working to grow our taproom sales. Up to this point, I've been doing all the sales calls in our self-distribution business. It's going to be tough to give up, but I think it is the right thing for the business and for me as the business leader. This means I need to identify someone to manage key accounts and grow our self-distribution business. Can anyone give me their best practices in identifying the right person? Key questions I should ask for in the interview? Also, what sort of incentives should be included in the contract - and not just for when I should kick in a sales bonus. I want to help grow this person's career and help them develop skills in ways that are mutually beneficial. Thanks in advance!
